Quick Weekend Recap/

This should be more accurately titled, "a smattering of my thoughts in no particular order."

I am currently consumed (only slightly) with jealousy because Doug hopped a flight today back to Austin. He and a team from the biz school are competing in a real estate competition hosted at UT. (University of Texas, not Tennessee.) He called and said he introduced his buddies to Hula Hut for lunch today (yum). So I am a single gal for a few days. Why yes, I am currently watching coverage of William and Kate. :)

To recap the past few days: my long weekend staycation was soo needed! It was great to be with my girls. We hit up many of the tourist-y things Nashville has to offer: Pancake Pantry, Belle Meade Plantation, took line dancing lessons at the Wildhorse Saloon, laughed at the wanna-be stars doing karaoke downtown, shopped in Franklin, saw Morning Glory, and went to the Gaylord Opryland the day it re-opened after the floods. It was fabulous, every last second. I am a terrible blogger because I literally took 3 pictures the entire weekend. One of the gals Rach is a professional photographer so I will post hers when I get them back! We took about a zillion photos.

In the meantime as soon as the girlies left town it's like Nashville decided it was winter. I am so glad I bought those rain boots because they have come in handy this week. Doug surprised me for my birthday with the London Fog cheetah rain coat that I had been eyeing. There is nothing that makes gray cold days more bearable than fabulous winter accessories.


Since my family is traveling for Christmas (nothing says Merry Christmas like Mickey and Minnie at Disney World) we are going minimalist on the presents this year. I was browsing for different things to add to my wish list. I've been looking for several months now for the perfect faux fur vest and lo and behold today I found it!

Don't get too attached, Gap made this vest for babies and this adorable dress that would be perfect for New Year's was made for girls! Boo, Gap. The search continues...


While it's cold out in case you were already thinking ahead to spring, the color gurus at Pantone released their hottest shades for 2011 during New York's fashion week. Here they are in their glory:

Early weekend + a Texas-sized blog shout out


Good morning everyone! I couldn't be happier because it's like today is my Friday - I am taking off tomorrow and next Monday to be with my girlies who are coming in town today!! We have a few activities lined up and plenty of time to just do nothing.

Today, hop (or click) on over to one of my favorite bloggers, Allison from Smart and Sassy with Sprinkles. She featured me on her "Happy Lately List" so show her some blog love! Allison is on her own adventure with her husband, earlier this year they moved from Texas 2 Chicago. I just adore her attitude and of course her style! I feel honored to be on her blog!

I am feeling like today is a two cup of coffee kind of morning. Anyone else? Happy Friday err, Thursday!

Hooray!

You know how there are like a zillion online contests out there to sign up for? I am the person who will enter every contest because, hey, you just never know. Well, today was my lucky day because my favorite photographer/slash/designer, Kayla Barker of Spink Studios, picked me to win free custom-designed Christmas cards! Hooray! And if you've been reading this blog, you know I've been writing about Christmas cards since September.

Kayla is a fabulous graphic designer and a wonderful photographer...plus she sells Stella & Dot and has a t-shirt business, there's really nothing she doesn't do! She's based in Midland but pretty much travels everywhere, destination weddings included! We had her design our wedding invitations, programs and save the dates. She knew exactly what I was looking for in the design:


Kayla also took anniversary pics for Doug and I. We had a blast hanging out with her and her husband in Dallas one afternoon for the shoot! You might recognize some of these photos I've used on my blog before.

Chattanooga: Scenes from the Weekend

When arrived at our hotel in Chattanooga Friday night (which I will say wasn't the fanciest and we didn't pay top dollar for), we were pleasantly surprised to find they had upgraded our room to one with an in-room jacuzzi and they had left candy bars and a birthday card for me. Thanks, Courtyard by Marriott!

Saturday morning we started our day of Tennessee outdoor-ness with a trip to Ruby Falls. It's an underground cave with a giant waterfall at the end.

There were a lot of Chilean miner jokes made on our underground tour. I just liked the pink hat!

Switching gears, after Ruby Falls, we continued up the mountain to Rock City. Doug wants me to point out here that Rock City is in Georgia. He got a kick out of that! The state line runs literally through a neighborhood along a street going up the mountain. Anyway, the name Rock City is misleading, it's WAY cooler than it sounds, and it's much more than rocks. Think gardens and cliffs that lead you up a mountain to a view of 7 states all at once on a clear day.

Then we headed to the Chattanooga Nature Center and did a drive-through nature trail. After several hours of walking and hiking, driving was nice.

Later Saturday night, we had dinner at a tapas restaurant that was quite delicious. I thought Chattanooga was going to be more or less small town country, but I was impressed with their downtown area, and the lofts and restaurants they have. Thumbs up all around! Sunday morning we headed to this crafts fair before brunch. Twist my arm... This doesn't really show it well at all but it was all very hip and etsy-like art. I got a necklace made out of recycled t-shirts. She made it for me on the spot after I requested the colors I wanted.

We ate brunch at Food Works. $1 mimosas and cinnamon apple-stuffed pancakes. YES please! The food was picture-worthy:

Sweet November

Tonight I made chicken piccata with lemon whole-wheat cous cous for dinner. Amazing, other than the fact that I almost made the apartment complex's smoke alarm go off. Oops! Trust me, I have heard neighbors do this before and it ain't pretty! Luckily, I closed off the kitchen and the hallway door before the smoke alarm went crazy.

Now, Doug is back up at the school for the evening getting some assignments and job searching done and I am sitting here drinking my Starbucks Mocha Via with the windows open...letting the smoky apartment air out... and it's lovely night!

November is my favorite month of the year because of my birthday, Thanksgiving break, and Christmas-is-so-almost-right-around-the-corner-but-not-yet and I love the anticipation! This fall has been unseasonably warm for Tennessee (which I'm okay with) but they say it's going to be a long, cold winter. I am also looking forward to November because Doug and I are going to Chattanooga this weekend, just to get away. Then, my birthday weekend, a few of my best buds Rachel, Sarah, Lauren, and Jess are coming to hang out for few days!! Needless to say, I am beside myself with excitement. I can't wait to show them around.

Besides birthdays and pending visits from friends, here's a few other things that have made me happy lately: (a la Allison @ smartandsassywithsprinkles!)

-Having a running buddy here in Nashville, Kristi. It's great because she challenges me and I ... well I'd like to think I challenge her too, who knows, but we are signing up for the Country Music Half in April! We will be training with Team Rio (some of the guys from Diamond Rio founded the team) and raising money for Big Brothers/Big Sisters!

-This applesauce cake recipe from Smitten Kitchen, I am making it this week!

-These boots, I ordered from Old Navy in camel and brown, they are low-heeled wedges and I have worn them everywhere! Best purchase ever!

-The Hermitage Hotel - *Correction: I mistakenly said the hotel was flooded this spring and underwent renovations. In reality, they renovated in 2003 and weren't flooded this spring. Other hotels such as the Gaylord Opryland and downtown Hilton Hotel were hit but not the Hermitage, luckily. Thank you to the fabulous marketing team who caught my error!* Last weekend, I met some friends at the hotel for drinks before going to see an old Midland friend dance in Swan Lake. The hotel is beautiful, I will be going back! I also love Nashville's resiliency after the flood and the can-do attitude that has brought this city together ... despite lack of media attention or really help from the rest of the country.


-Yesterday I requested time off in March to go to San Antonio for a good friend's wedding!! Yea! Congrats Amy & Ryan it's going to be one heck of a good time.

What I Cooked....

Doug is still up at school working late on some stuff and I have finished my P90X for the day and ate homemade black bean soup for dinner...just kind of chillin...there's a tornado happening a few counties over so I am just absentmindedly listening to the weather on tv...

After recovering from working super late at homecoming/reunion Friday night, the rest of the weekend I took some time and tried some new recipes. I would be lying if I said I didn't pull out my Better Homes & Gardens cookbook and just start reading it for fun. I remember seeing my grandma and my mom doing that. I used to think that was weird but now I totally understand! ALL the recipes were amazing and you should definitely try them out! Sorry I am feeling lazy so no pictures this time.

Here's what I made and I'll put the recipes below:
Pork Tenderloin Agrodolce
(this might be my favorite meal I've made. I served it with whole wheat gnocchi and pinot noir)
Black Bean Soup
Homemade salad dressing
Hippy oatmeal (makes enough for 4)


Pork Tenderloin Agrodolce from Cooking Light
3/4 cup basalmic vinegar
1/2 cup green olives (olives are gross, so I left these out)
1/2 cup dried sweet cherries
1/2 cup fat free, low sodium chicken broth
2 T sugar
6 garlic cloves
3 thyme sprigs (I used dried)
1 lb. cipollini onions, peeled
1 t. kosher salt, divided
2 T olive oil
2 -1 lb. pork tenderloin (I just cooked one pork tenderloin, and I cut the amount of onions in half)
1/2 t. freshly ground black pepper

1. Pre-heat oven to 500
2. Combine first 8 ingredients in a medium saucepan, stir in 1/2 t. salt, bring to a boil. Cover, reduce heat to medium-low and cook 45 minutes or until onions are almost tender, stir occasionally. Uncover, increase heat to medium-high, and cook 7 minutes or until thick.
3. Heat oil in large cast-iron skillet over medium-high heat. Sprinkle pork with remaining salt and pepper. Add pork to pan, cook 1 minute. Turn pork over. Place pan in oven and back at 500 for 12 minutes or until thermometer reads 155 (light pink.) Remove from oven and let sit for 10 minutes. Slick pork crosswise in 1/2 inch thick slices, serve with sauce. AMAZING!!!

Black Bean Soup from Cooking Light
Great for a cold day!

1 cup dried black beans
1 t. olive oil
1/4 cup chopped onion
1 garlic clove
2.5 cups water
1/2 t. dried oregano
1/4 to 1/2 ground red pepper (I didn't have this I used 1 t. chili powder)
1/4 t. cumin
1 (14 oz) can organic vegetable broth
1 (4 oz can chopped green chilis) (I forgot to buy this at the store, so I used half a fresh jalapeno-no seeds!)
1/4 cup tomato paste
1/2 t salt
chopped fresh cilantro for topping (I used pepperjack cheese)

1. Sort and wash beans, place in large dutch oven. Cover with water to 2 inches above beans, bring to a boil for 2 minutes, remove from heat. Cover, let sit for an hour. (I didn't do this, I soaked the beans overnight - no heat. Either way works the same.)
2. Heat the olive oil in pan over medium high heat. Add onion and garlic, sautee for 3 minutes or until tender. Add beans, 2.5 cups water, oregano, red pepper, cumin, broth and chilis, bring to a boil. Cover, reduce heat and simmer for 1.5 hours, or until the beans are tender. At this point your kitchen will start smelling amazing.
3. Place half the bean mixture in the blender. Remove the center piece of the blender's lid so the steam can be released. Hold a paper towel over the hole as you blend, so that it doesn't fly out. Blend until smooth. Put the first half aside, and repeat with the rest of the beans. Return everything to the pan and add the tomato paste and salt (and any other seasoning to taste, if you want) Sprinkle with cheese, cilantro, serve with chips and salsa.
Serves 4


Hippy Oatmeal from Tasty Kitchen

1 cup steel cut oats
4 cups water
1/2 cup half and half (I split half and half and 1% mile)
handful dried cherries
handful dried cranberries
handful raisins
handful sunflower seeds, almonds, pumpkin seeds, whatever you like
1/4 cup flax seeds

Toss all this into your crock pot. Turn it on low before bed and when you wake up you'll have amazing oatmeal. If you plan on sleeping in super late, it could burn. But if you're a 6-8 hour sleeper youll be fine. I added honey when I ate it, you could add brown sugar, butter, milk, whatever you like. It's delish!

Homemade Salad Dressing my friend Liz gave me this recipe. She's in the hospital today -- get well soon Liz!! It makes a ton, it's carb- and gluten-free and tastes great!

1/2 cup honey
1 cup olive oil
1/4 apple cider vinegar
1 t. celery salt
1 t. paprika
1 t. dried onion
1 t. mustard powder
1 t. salt
